My favorite Caesar Salad Dressing

If you've been following me on Instagram, you've probably seen a plug or two about my love for Caesar Salads. At some point last year I believe I mastered a Caesar Dressing. I was vegan at the time I was working on it, so the dressing is dairy-free. Though I'm not vegan today, I still make it the same way because it's absolutely delicious as is. And why mess with a good thing?

I use this on Salmon Caesar Salads, Roasted Root Vegetable Caesar Salads, Caesar Salad Quinoa Bowls, you could use it as a veggie dipper... there are so many ways to use the dressing!

What you'll need...

1/4c water

2T olive oil

1/2c raw cashews, soaked for at least one hour (ideally overnight) strained and rinsed

1 lemon, juiced

1t Dijon mustard

1t Worcestershire sauce (vegan)

1t garlic, minced

1/2t garlic powder

1T nutritional yeast

1/2t salt

1/4t pepper

What you'll do...

Put all ingredients in a food processor and blend until smooth.
